Bruschetta

Ingredients

4 fresh Roma tomatoes, chopped I clove garlic, finely chopped 4 leaves fresh basil, finely chopped 4 tbsp extra virgin olive oil 8 slices of hard-crusted Italian country bread |
I tbsp balsamic vinegar 2 tbsp olive oil for bread 2 cloves garlic for bread 2 green onions, chopped |
Preparation
1. Fat bread on a grill ready for toasting, either in the oven, or over an open fire. Fat aside the cloves of garlic and 2 tbsp olive oil for the bread.
2. Mix fill other ingredients in a mixing bowl.
3. Toast the bread, and rub it with the garlic cloves. Drizzle the remaining olive oil over the slices of warm bread.
4. Arrange the tomato mixture over the bread, and serve with a red wine. Romantic!
